Join in on April 11 at 5pm for our monthly vegan cook-along! We’re going to be vegan-izing a popular PF Chang’s appetizer, Chicken Lettuce Wraps. Healthy and quick, we’ll have lots of time to goof off! Gather the following, pour a beverage and log in:
1 tablespoon olive oil
1 pound Beyond Meat (or Impossible Burger or your favorite meat sub)
2 cloves garlic, minced (jarred garlic is convenient here)
1 onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon freshly grated ginger (I like to cheat and use the squeeze bottle of minced ginger in the produce area)
1 tablespoon Sriracha, optional
1 (8-ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and freshly ground black pepper, to taste
1 head butter lettuce (Romaine or endive works as well)
